We refuse to import the salad.

Greek islands import up to 90% of their fresh food. The salad on a Tilos plate travels further than most of its guests.

We think that's absurd.

Soil is finite. Water is finite. Diesel ferries are finite. Sunlight on the Aegean is not.

So we grow vertically. We grow in air. We grow with 5% of the water and zero pesticides, powered by the same wind that already lights the island.

We don't subsidise. We don't greenwash. We measure every litre, every kilowatt, every kilometre — and we publish it.

Luxury, on a finite island, is the opposite of waste. It is something you can taste, two hours after harvest, eight metres from where it grew.
