Conventional agriculture is linear. Inputs go in — water, fertiliser, fuel, plastic — and waste comes out: runoff, residue, packaging, food loss. A Tower Farm is built the other way around. The default state is closed; every flow is a loop until proven otherwise.
Water
Recirculated continuously. The only water that leaves the system is the water that leaves inside the plant.
Nutrients
Mineral nutrient solutions are dosed to the plant's measured uptake. No leaching, no over-application, no runoff into the Aegean. End-of-cycle solution is filtered and reused.
Plant matter
Root waste and trimmings are composted on-site and returned to local olive groves and vineyards as soil amendment. Restaurant scraps from partner kitchens can be added to the loop.
Packaging
Greens harvested in the morning reach hotel and restaurant kitchens the same afternoon, in reusable crates. No plastic clamshells. No single-use bags. The supply chain is short enough that packaging becomes optional.
If you can hand the lettuce to the chef before lunch service, you don't need to wrap it.
